Butternut Squash; The Series - Part II


The air has a crispness to it here and I think I am finally ready for autumn - plus, it is October. One of my favorite fall soups to make is an apple butternut squash soup from the Barefoot Contessa. It is very easy to make and it really is delicious - with butternut squash, apple cider, apples, onions and just a touch of curry powder how could you go wrong? As per usual, I have a few modifications; I add a bullion cube and a splash of white wine to mine. If you like butternut squash, give it a try.

wow - it looks delicious! But I don't know about that "splash" of white wine. Who can stop at just a "splash"? And why not just eliminate the middle man, so to speak, and drink the wine BEFORE you put it in the soup. I can do a bottle of wine and a cup of soup. Or am I getting the proportions wrong? lol
